1 Onion, chopped
2 cloves Garlic, crushed
1 tsp finely grated ginger
1 tbsp hot or med curry powder
400g tin chopped tomatoes
57ml veg stock
2 tbsp sweetener
57g natural yoghurt or fromage frais
Spray frying pan with fry light and place on medium heat.
Saute onion, garlic, and ginger for 1-2 mins.
Stir in curry powder and cook for two more minutes.
Add tomatoes, sweetener and stock and bring to the boil.
Reduce heat and simmer for 12 to 15 minutes.
Blitz mixture with hand blender and return to heat.
Remove from heat.
Stir in yoghurt or fromage frais.
Can be frozen for future use.
